Sicilian Tomato Pesto Pasta
Wow, once again it has been a long while since I have added a new post. This dish is so tasty that I had to take a photo and share it with you.
This is a very simple easy to prepare meal and since you aren’t heating the sauce, pretty quick too. All you need are some fresh plum tomatoes, basil, arugula, almonds, parmesan cheese with just a drizzle of olive oil. Oh, let’s not forget the garlic. I used bucatini pasta which is a fatter noodle than spaghetti and has a hole through the center. If you like your pasta “al dente” like I do this cooks up in 7-8 minutes.
12 plum tomatoes blanched and peeled
3 cloves of garlic
1 cup basil
1/3 cup almonds (soaked and the skins removed)
1/2 cup parmesan cheese
1 tsp red pepper flakes
salt and pepper to taste
Add the garlic, almonds and red pepper flakes to the food processor and grind until chopped. Next add the tomatoes, basil and cheese. Process until you get a nice sauce. With the processor running add some olive oil. You can heat this sauce or just toss it over steaming pasta.
I used a hand full of arugula because I only had a few basil leaves. I know that I bought basil but it was one of those things. You get home from the store and oops, the basil is missing. Now how did that happen??
For a lighter low carb meal get out your julienne slicer and make fresh zucchini noodles. Tasty!!
