Happy Thursday!! I bet everyone is filled up from all the yummt Halloween treats so I decided to make something that doesn’t include any sugar, LOL.
I love puff pastry and the shells too. Theseshells are so cute and you can stuff them with anything you like. I chose to go with some fresh chopped spinach, mushrooms, onions, garlic and gruyere cheese. I am in love. Those are all some of my favorite ingredients.
Can you believe that Novemeber is here already? I surely can’t. Now it is time to start thinking about Thansgiving. Is anybody making fresh cranberry sauce? I made it last year for the first time and I am definitely making it again this year.

I made this recipe up so the exact amounts will probably vary.
6 frozen puff pastry shells cooked according to package instructions
1 teaspoon olive oil
1/2 a medium onion chopped
2 clove garlic minced
8 ounces mushroom sliced (I used baby bellas)
1/3 cup or more Gruyere grated
couple of pinches thyme
Saute the onions and garlic in the olive oil until soft and then remove to a large bowl. Add the mushrooms and cook over high heat until just starting to brown. Add the mushrooms to the bowl. Next add the fresh spinach and mix together with the mushrooms, onion and garlic. Season to taste with salt and pepper and the thyme. Add in the cheese and mix well. Stuff the pastry shells mounding on the top and bake in a 425 over until the cheese melts. Easy and tasty.
