Corn Pancakes – French Friday’s with Dorie.

Ahh, French Friday’s with Dorie.  Well, today is Saturday so I missed the actual Friday post but decided to post it anyway.  I have been really busy this week.  Lots of things to do.

This is a simple and easy to make as a side dish or appetizer.  You can also serve these for breakfast with a little syrup.   There are only a few ingredients involved so it whips up pretty quickly.  I replaced the eggs with the Ener-G egg replacer to make the cakes vegan.  I wish that I had had some fresh grilled corn to use even though the recipe called for canned corn.  I added some crushed tomatoes and placed the cakes on top of live alfalfa sprouts.  A few slices of jalapeno peppers would have really given these tasty pancakes a kick.

    Looks delicious! Do you have to become a member of to get the recipe, or do you have to get it from the cookbook – Around My French Table by Dorie Greenspan ? I don’t want to buy a non vegan cookbook. I love the corn pancakes from Vita Cafe in Portland, OR. They have fresh corn in it along with jalapeno peppers and topped with vegan cheese and guacamole. Been looking for a similar recipe.

      Hi Lynn, thank you for stopping by. With French Friday with Dorie we were not supposed to put the recipe up, they wanted you to buy the book, but
      your local library will probably have it. That is what I did, so I don’t have the recipe at hand. I love the idea of adding jalapeno peppers and definitely fresh corn. I used the enger-g egg replacer.
      If you follow the muffin recipe on the box and just add the peppers and corn it will probably work out. I hope that helps and let me know f you make them.

      Hey Kim how the heck are you? I heard the same thing. It will be in San Francisco and I really want to go. I used to live there and haven’t been back for about 3 years now. My favorite city.

      • I’m good. Just crazy busy. Had a sick cat, then a sick horse, then a sick relative. It’s been nuts. Now I have friends visiting from BC this week. Then next week my bro is visiting. I swear it’s nonstop action. But I always say I’d rather be busy than bored. I think I might be delusional on that one.

We all use the Around MY French Table cookbook by Dorie Greenspan, each week there is a recipe from the book that we all make and then post and link up to the site. You should check it out it is fun.
