Veggie Fruit Juice Veg Pledge

 

Hey, Hey, as part of the Foodbuzz Tastemakers program I was selected to participate in the Green Giant Veg Pledge.  What that means is that for the next two weeks I will be adding one more cup of veggies to my diet daily.  I can do this!!   I really plan to challenge myself though by making sure that the extra cup per day is a variety of vegetable that I don’t normally eat and also to eat the vegetables that are not my favorite.  Peas are still out.

If you have any veggie recipes that will help me learn to enjoy eggplant, rutabagas, okra, collard greens and yellow squash, please send me a link.

I hope that you will join me is this effort to eat more veggies and fruits.   Now that spring has sprung I think we will really start to crave lighter meals that include more vegetable dishes and salads.

Today I am starting the day off with this veggie fruit juice.  It’s best in my opinion to have all these ingredients chilled before you juice them.  Delicious.

For the Juice

6 carrots
2 celery stalks
1 apple
1/2 lemon
1/2 inch ginger

  2. Good luck! I’m sure you’ll be able to do it. I love almost all veggies. The only ones I don’t like are beets and the stems of swiss chard (although the leaves are tasty).

    And lol – some of my favorites are the ones you don’t like – collards, okra, yellow squash and eggplants. :)

  3. What an awesome pledge! I love roasting broccoli and cauliflower with lemon juice, olive oil, chopped garlic and sea salt. It is SO good. Thank you for sharing. I hope you are having a good Wednesday, and I hope the end of the week is even better.

  4. What a great veggie juice to kick start your veg pledge! I love love carrot juice, and green juices that include fruit. I worked with a nutrition study in school, we worked with juicing. I was able to try so many beautiful combinations of veggie juice, I love it! The Green Machine from Naked Food Juice is my favorite, and Green Planet juice from Trader Joe’s is sooooo delicious! At home I love adding spinach to my smoothies, especially with a strawberry smoothie:-) Take care, Terra

  6. Damn, did you really make that yourself?! You must have a nice juicer… or maybe I’m just behind the times. My mother bought a juicer 10 years ago which was terrible. Always made the juice so horribly frothy and nasty, but this looks just fantastic. It’s actually making me reconsider my opinion of home juicers and want to buy one. What type do you have? This looks fantastic… love the colour too!

      Hey Charles, of course I made those or the juicer did. The one I have is called the Juicemaster Jr. It works great but I can only get about as much as those two glasses in the photo before I have to clean ot the pulp. They have some really top o the line ones now, some with a heating element for soup after you have juiced the veggies. Right expensive though.

  7. Thanks for this great looking juice recipe! I have been meaning to add “juicing” to my daily routine and this recipe gives me good reason to start. Beautiful photo, also!

  9. There is no such thing as overdosing on fruits and veggies ! ;D That concoction looks so healthy and delicious ! Most of the time I just drink freshly squeezed orange juice , will try your combination sometime !

      Thanks Anne, we still have tons of oranges out on our trees that need to be picked. I should try to make something with them. Have a wonderful weekend.

  10. nice challange suzi, sounds very much managable. The juice sounds tasty, I am not sure about celery though, hadnt tried that in a juice before.

  12. Thanks. I’m nothing if not honest about my feelings for healthy food. Lol. It’s is 52 right now. Tomorrow it goes up to 59. It was so nice when we got home from Florida then the bottom just dropped out. It’s been chilly ever since. I rebel by wearing capris and tanks around the house. But then I get cold and turn on the heat.

  13. This looks fantastic! Good for you for doing this. I made eggplant fries once. I’m not sure that meets the healthy standard you want. Lol! On occasion when I do eat salad I do chicken salad with mandarin oranges to jazz up those veggies. Or I throw pistachios and pears in a salad. As you can tell my solution to veggies is to add fruit.

  18. I am loving this pledge – you know I took mine enthusiastically!

    Favorite veggies: raw zucchini, carrots, and brussels. Least favorite: cooked broccoli and yellow potatoes.

  19. This is a great idea Suzi! I just found out that a market is opening close to us, which means fresher produce more often. The nearest grocers was nearly 50 miles away, so going to the market was limited, which means limited produce.
    Your juice here does look delicious and I am inspired! Great post.

  20. Suzi, there´s no better way to energize the healthy way than with fresh made juices. The possibilities are endless and there is so much room for experimentation. I wish you the best on your new juicing quest!
