Spicy Chili Garlic Soup with Spinach

It’s  been many years since I’ve made this spicy garlic soup recipe.  A friend of mine from San Francisco came to visit me here in Florida, wow, 20 years ago and she made this soup.  I had totally forgotten about it.  But let me tell you this is one spicy, garlicky sinus clearer.  I woke up this morning and the weather had changed again from 85 degrees and sunny to rainy and low 50’s.  On top of that there is quite a bit of pollen in the air right now. The orange and grapefruit trees are starting to blossom.  Honestly there is nothing quite as sweet and fragrant as the orange blossoms but boy do they play on your head.  My eyes were all puffy and my head was throbbing and I had total congestion.  Boy, do I know how to whine.

Anyway, those symptoms always call for something hot and spicy.   This soup is perfect for that.  Liquid heat in a cup.  You can make it less spicy by leaving out some of the dried red chili’s and cutting back on the garlic cloves.  This is another quick and easy recipe.  My friend doesn’t even add a broth base she just uses the chili’s, garlic and water.  I included the spinach since I keep saying I am going to make a spinach soup.  LOL, I am not sure this really qualifies as spinach soup.

Thanks for coming by and please stop back by on Thursday.

1 tablespoon olive oil

3-5 dried arbol chili’s – or you could use a milder chili

4-5 garlic cloves minced

4 cups water or vegetable broth

Chopped fresh spinach

Heat the oil and add the chili’s and saute them them until the start to pop and become fragrant, then add the garlic.  I sauteed the garlic until it started to brown that way it isn’t quite so pungent and give a nutty flavor.  Add the water or broth and bring to a boil.  Turn down the heat and simmer about 15 minutes.  Place some chopped spinach in each bowl and then ladle the soup over top.  You can also add some stale bread cube or you can place slice of bread on top (like onion soup) then add some grated Gruyere and place under the broiler until bubbly.

Not everyone in my house is Vegan so we did have to make some with the melted cheese.  I have included photos below.  Looks yummy don’t you think?

Thank you so much Ramona. I have started to post on Mondays and Thursday, trying to keep to a schedule and believe me that is hard to do for me anyway. Stop back tomorrow, I don’t know exactly what the post will be but I don’t think soup. Thanks sweet lady.

  34. it clears your sinuses AND it’s good for you AND it’s delicious…sounds like a three-for-the-price-of-one kind of awesome soup!

  35. Congratulations Suzi!

  36. Hi Suzi, it looks a bit like my onion soup with the gratin on top, but underneath, it’s a little pot of “green fire” instead :D I love it – garlic, spinach, chillies – that’ll give the sinuses a good clear out for sure :D

  37. Wow, what an incredibly simple but flavourful soup!

  38. Congrats on the Top 9 today!

  39. love your recipe any soup that has chiles I am going to try. I love any soup with chiles especially my favorite Tom Yum thai soup where I crank up the heat.

If your not crying your not eating I say

    best wishes

  40. Now this is the kind of soup I should have had when the flu caught up with me few weeks back. With all that chilli and garlic I would have been healthy in no time!

  41. Hi Suzi!
Chili, garlic and spinach : simple but interesting combination! I have everything in my pantry. Can’t wait to give a try. Do you think it ‘s weird to serve it with some rice?

    • Suzi

Hi Tataya thanks for stopping by. I hope you do make this sop it is delish. Rice would be fine to serve with it but myself, I would go with noodles.

  42. Looks like a cleansing soup to chase away the colds! Love all the garlic!

  43. I love this simple soup, it sounds good and spicy. I love the spinach in the soup, yum.

  44. this looks amazing. it looks low calorie too. im gonna make this this week :-)

  45. WOW! It’s a super simple but yummy soup – I love spinach soup and the hotter the better. Where in Florida are you? I grew up in South Florida, Fort Lauderdale, but now live in New England, CT.
    Nice meeting you in bloghop.

    • Suzi

Hey Georgie, I grew up in South Flrodia too, North Miami area. Now live just northwest of Orlando. I bet you are brrrr cold up there in New England. Thanks for stopping by and have a wonderful day.

  46. Hi Suzi, your soup (both with and without cheese) looks delicious and very original. Reading you I realise Spring is not all joy for some of us… I also know several people who suffer from pollen.
Thank you for visiting my blog!

  47. This does look yummy and just what the doctor ordered. I’m having head troubles too— wish I could say it was orange blossoms messing with my head, I’m afraid it’s too early for the maple trees and I just have a cold.

  48. Liz

Ah….this soup looks wonderful!!! I hope it helped clear your stuffy head, Suzi~

  49. wow,I love the spices and spinach.my type of soup. Thanks!

  50. Oh yes, totally it looks yummy! My husband can take the spiciest one and we’ll do less on chilis. I head it’s going to be cold again (it was like nice 70F weather for the past few days), I’m totally considering to make this!

  51. Hi Suzi!

    Ahh I love Orange blossom frangrance… =)
but I guesse my husband would have a bit of an allergic reaction to those. Your soup looks like a great cold killer too, chilli will help it open up and the spinache for green power.

thanks for sharing your nearly forgotten recipe, it should get lost now for sure! ;)

  52. Why on earth would one decrease the amount of garlic and chili powder?!?! So simple and so delicious! Another great soup Suzi!

  53. Great flavors in this soup and I like the fact there is baby spinach in here. Definitely a comforting dish. Also, the cheese is a great addition. Well done!

  54. That sounds wonderful – I love the spinach in this, and you know I can’t possibly resist when there’s chili and garlic involved :) Beautiful!

  55. How hav I never had anything like this!? I love garlic. Could you even add some miso in there? I kind of want to go make this right now… :)

    • Suzi

Laura, I wish I would have thought of that instead of the veggie broth, miso would be perfect for the salty. I didn’t add salt beacuse of the broth and I don’t ususally add salt anyway. I love that flavor, the white miso would be perfect to stir in right at the end.

  56. This is a head clearer for sure! It’s also very pretty, love your pictures.

  57. I always love those spicy garlicky sinus clearing soup ! ;D The one with melted cheese looks delish , too !

  58. Yum! What a great recipe. I also love your artistic photos. Great job.

  59. This looks so delicious! Nicely done!

  60. The soup looks warming, delicious and comforting!

  61. Oh! That soup sounds perfect for a comforting meal. I like how you used arbol chilies. I just recently discovered them and I’m loving them so far!

    • Suzi

Hi Divya, I recently discovered them as well. I have a huge bag full and they are really spicy but I am in love with spice so it works for me. Thanks for stopping by.

  62. I know what you mean about the weather. I keep joking that I didn’t move to Georgia to be this cold! And I did the same thing yesterday and made a big pot of pasta e fagioli. Crazy weather… Hope your allergies feel better soon!

  63. What a great sounding and looking soup!

  64. Lora @cakeduchess

A gorgeous spicy spinach soup. I’m near you and I know this cold front through us for a loop. My allergies are not liking it but I would really love this soup :)Nice to find your blog!

  65. Suzi, your soup looks gorgeous! A simple delight of flavour and nutrients. I happen to love the combination of chili and garlic and, funnily enough, just came from Sissi’s blog where she was featuring the same tantalizing combination. The cheese version looks pretty darn yummy too… lovely photos Suzi – very luminous.

  66. suzi,
This soup looks perfect for our changeable Illinois weather, and my allergies. I love the spinach, garlic and chili combo.
Thank you for stopping by my blog, and your sweet words:)

  67. I feel your pain with the weather change and all the pollen here in FL. My meyer lemon tree is in full bloom, looks and smells incredible, but I am paying the price with the allergies (it is worth it)!!! This soup looks so yummy, can’t wait to try it.

    • Suzi

Hi Shari, thanks for stopping by it is always nice to meet a fellow Floridian. Wish I had a meyer lemon tree I only have oranges, grapefruits and tangerines. Lots of them.
