It’s been many years since I’ve made this spicy garlic soup recipe. A friend of mine from San Francisco came to visit me here in Florida, wow, 20 years ago and she made this soup. I had totally forgotten about it. But let me tell you this is one spicy, garlicky sinus clearer. I woke up this morning and the weather had changed again from 85 degrees and sunny to rainy and low 50’s. On top of that there is quite a bit of pollen in the air right now. The orange and grapefruit trees are starting to blossom. Honestly there is nothing quite as sweet and fragrant as the orange blossoms but boy do they play on your head. My eyes were all puffy and my head was throbbing and I had total congestion. Boy, do I know how to whine.
Anyway, those symptoms always call for something hot and spicy. This soup is perfect for that. Liquid heat in a cup. You can make it less spicy by leaving out some of the dried red chili’s and cutting back on the garlic cloves. This is another quick and easy recipe. My friend doesn’t even add a broth base she just uses the chili’s, garlic and water. I included the spinach since I keep saying I am going to make a spinach soup. LOL, I am not sure this really qualifies as spinach soup.

1 tablespoon olive oil
3-5 dried arbol chili’s – or you could use a milder chili
4-5 garlic cloves minced
4 cups water or vegetable broth
Chopped fresh spinach
Heat the oil and add the chili’s and saute them them until the start to pop and become fragrant, then add the garlic. I sauteed the garlic until it started to brown that way it isn’t quite so pungent and give a nutty flavor. Add the water or broth and bring to a boil. Turn down the heat and simmer about 15 minutes. Place some chopped spinach in each bowl and then ladle the soup over top. You can also add some stale bread cube or you can place slice of bread on top (like onion soup) then add some grated Gruyere and place under the broiler until bubbly.
Not everyone in my house is Vegan so we did have to make some with the melted cheese. I have included photos below. Looks yummy don’t you think?
