Ahh, French Friday’s with Dorie. Well, today is Saturday so I missed the actual Friday post but decided to post it anyway. I have been really busy this week. Lots of things to do.
This is a simple and easy to make as a side dish or appetizer. You can also serve these for breakfast with a little syrup. There are only a few ingredients involved so it whips up pretty quickly. I replaced the eggs with the Ener-G egg replacer to make the cakes vegan. I wish that I had had some fresh grilled corn to use even though the recipe called for canned corn. I added some crushed tomatoes and placed the cakes on top of live alfalfa sprouts. A few slices of jalapeno peppers would have really given these tasty pancakes a kick.
